Gingerbread Coffee Cake Mini Muffins

The holiday season is here and many of us will be hosting friends and/or family over the next few weeks. What a great way to treat your guest in the morning than with Gingerbread Coffee Cake Mini Muffins. These two-bite sweet treats are perfect with that morning cup of coffee. Packed with gingerbread flavor which is synonymous with the holidays and coffee cake crumb on top, no one can resist. Your home will smell amazing and will spark that holiday spirit as soon as your guests walk through the door.

For most of my life I have enjoyed my godmother’s coffee cake every Christmas morning. I continue this tradition today. (A Christmas Morning Tradition: Chocolate Chip Coffee Cake) It’s a perfect special treat while you open gifts under the tree and that’s why I wanted to transform this tradition into an easy crowd pleasing breakfast treat for all your guests.

Gingerbread Coffee Cake Mini Muffins

Prep Time: 15 mins
Cook Time: 18-20 mins

Ingredients

  • 2 Cups - All-Purpose Flour
  • 1/4 Teaspoon - Salt
  • 1 Teaspoon - Baking Soda
  • 1/2 Teaspoon - Ground Cinnamon
  • 1 Teaspoon - Ground Ginger
  • 1/2 Cup - Dark Brown Sugar
  • 1 1/2 Teaspoon - Coconut Oil
  • 1/2 Cup - Milk
  • 1/2 Cup - Molasses
  • 1/4 Cup - Unsalted Butter, melted
  • TOPPING:
  • 1/8 Cup - Sugar
  • 1/8 Cup - Brown Sugar
  • 1/4 Teaspoon - Cinnamon
  • 1/8 Teaspoon - Ground Ginger
  • Pinch of Salt
  • 1/8 Cup - Unsalted Butter (melted)
  • 1/4 Cup - All-Purpose Flour

Method

  1. Preheat oven to 375° F and line your mini muffin tin with paper liners
  2. In a large bowl, mix the AP Flour, salt, baking soda, ground cinnamon and ginger. Set aside
  3. In a small bowl whisk together the dark brown sugar, coconut oil (melted) and milk. Once combined add to the large bowl with flour mixture. Mix
  4. Add the molasses to the batter and mix and then the melted butter and mix until combined.
  5. Fill each muffin tin until full. Set aside
  6. For the topping. Mix the Sugar, Brown Sugar, Cinnamon, Ginger and Salt. Once combined, add the melted butter and flour. Mix
  7. Sprinkle topping generously on top each mini muffin. Bake for 18-20 minutes or until toothpick test is clean
