Budget Friendly Dinners To Kick Off The New Year

Happy New Year! This time of year is always filled with reflection and goal making. Many may look to save additional income and in light of the current government shutdown in the US, this is especially true. That is why today’s post is all about Budget Friendly Dinners to Kick Off The New Year. Over the past two weeks I have made most of these recipes and made some tweaks, just to change things up. My first change for the Sausage and Vegetable Lasagna was to buy pork sausage and cooking it out of the casing to create a sausage crumble layer. Additionally, I swapped out the fennel for cartelized onions. These changes made for some declicous dinners, three dinners for two adults, to be exact.

The homemade chicken soup was the most cost effective meal thus far and made a total of 6+ servings. The spaghetti noddles were on sale, I only needed two bone in chicken breast, which is generally a cheaper cut of meat and the target brand chicken stock (low sodium) was on sale too. Additionally, the baby carrots doubled as a snack for my kitchen helper and a single tomato completed my grocery list. The celery had to sit out this round due to the $4 price tag, but luckily the chicken bullions I already had in the pantry contain celery flavoring.  To really extend my savings I also made homemade crunchy olive oil and sea salt crackers. (archived recipe here) This was the salty crunch every soup needs.
